Regulatory Information

See Illinois Allergen Awareness® law

TAP’s Illinois Allergen Awareness training is fully updated to comply with the new 2026 Illinois Celiac and gluten-free food safety law.

In Illinois, state law requires that all Certified Food Protection Managers (CFPMs) working in restaurants must complete allergen awareness training. This law is part of the Illinois Food Handling Regulation Enforcement Act (410 ILCS 625) and was updated under Public Act 100-0367, which took effect on January 1, 2018.

The law states that CFPMs must complete allergen awareness training within 30 days of being hired and then every three years after that. The training must come from a program that is ASTM 2659 Aligned, which can be ANAB or other reputable provider, meaning it meets the official standards approved by the state.

Restaurants are required to keep proof of training on file—usually a certificate showing the course was completed. This documentation must be available for review by local health departments during inspections. Failure to comply with this requirement can be recorded as a violation during food safety inspections.

This law applies only to restaurants, as defined by the state, and not necessarily to all other types of food establishments. The goal of the regulation is to ensure that food managers understand how to prevent allergic reactions and protect customer health through proper food handling practices.
