HACCP Step 4: Monitoring Critical Control Points – Keeping Food Safety on Track

Monitoring critical control points (CCPs) is about making sure food safety measures are working as intended. 

Monitoring involves regular checks and observations using specific, measurable methods tailored to each CCP, for example:

  • taking temperatures, 
  • measuring pH levels, 
  • checking cooking times, or 
  • conducting visual inspections.

The purpose of monitoring is to detect any deviations from safe limits before they become a risk. If a measurement falls outside the established parameters, it triggers corrective actions to prevent unsafe food from reaching consumers. Effective monitoring also provides a record of compliance, which is valuable for internal audits and regulatory inspections.
