Even with strong controls, deviations can happen. That’s where corrective actions come in.

Corrective actions are pre-planned steps you’ll take if a CCP fails to meet its critical limit. For example, if cooking temperatures fall below the required threshold, corrective actions might include holding the product, discarding it, investigating the cause, and adjusting the process.
